Hasselback fanned potatoes

For my strip steak, I wanted something fancier than my cottage fries that I had perfected.  Iโ€™ve admired these adorable yet fancy looking fanned potatoes, called Hasselback potatoes which originated in Sweden. But I always assumed they will be difficult to make.  

Actually not at all!  They couldnโ€™t be simpler or effortless.  

All you need to do is make 1/4 inch slices into the potato without cutting all the way through, using a small serrated knife.  Then itโ€™s alternating between brushing in butter-oil-garlic mixture, oven, rebrushing, and oven again.  

Thatโ€™s it.  And the result couldnโ€™t be more tempting.  Just try keeping these babies untouched till dinner.  Better make extras.

ingredients 

  • 1.5 lb bag of new potatoes, cut 1/4 slices 3/4 way through

  • 2 tbsp melted butter

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • Salt

  • Pepper

  • 2 tbsp grated Parmesan 

  • 1/4 cup chopped parsley

cooking steps 

  1. Preheat oven to 375 degrees F.

  2. Make 1/4 inch slices with a small serrated knife 3/4 way through the potatoes.

  3. Combine melted butter, olive oil and garlic.  Brush the mixture onto each potato and season with salt and pepper.

  4. Arrange on baking sheet lined with parchment paper.  Bake for 20 minutes, until slits are starting to separate.

  5. Brush potatoes with more butter mixture and bake for another 25 minutes.  They should be golden in color.  

  6. Sprinkle some Parmesan sparingly and broil for 2 minutes for color if
